This week was a pretty short week as there was a Vesak Day public holiday on Friday. We had a fun 2 day outing and so had only 3 school lunches. This week’s recipe is from Yum-Yum Bento Box: Fresh Recipes for Adorable Lunches book, that I’ve written about in an earlier post. As the June school holidays are approaching, I am currently working on some Geography and Culture lessons for MilkyBar. Will post when ready.
Mon: Veggies noodles in tomato sauce with quail eggs, baked spicy pumpkin wedges, cucumber slices, and applesauce
Tues: Tuna couscous with cherry tomato and black olives, carrot sticks, blueberry cake and Dora icing
Wed: Pesto macaroni, corned beef hash patties, and cherries
Corned Beef Hash Patties (Adapted from Yum-Yum Bento Box: Fresh Recipes for Adorable Lunches)
Several tbsp extra-virgin olive oil
1 chopped onion
1 can (12-oz) corned beef
2 boiled potatoes
1/4 cup green peas/1 carrot (grated)
Salt and pepper
Panko breadcrumbs (as needed)
Heat oil in a pan and saute onion for 2 min, add the corned beef and fry til meat separates nicely. In a separate bowl, mash the potatoes. Add corned beef, onions, carrot, egg, salt and pepper, mixing well. Chill in fridge til firm. If mixture is still too soft, add some panko breadcrumbs. Form into patties and fry in olive oil til browned.
We also did some playroom re-organising over the weekend. We emptied out his toy boxes, sorted out the toys into groups, tidied them into appropriate containers and labeled them. And of course, the minute I start bringing out the toys, MilkyBar starts playing with them instead of helping out 🙂
We sorted them into Pretend, Play Doh, Lego, Vehicles, Balls, Hot Wheels, Games, Thomas and Blocks. Hopefully, this will help MilkyBar to keep his stuff tidy.
