This week we’ve been working for MilkyBar’s first ever exam – his Arabic/Islamic studies oral exam. Luckily, his teacher is very supportive and positive about the entire process so it has not been stressful for MilkyBar at all.
Mon: Chicken salad with grated carrots and raisins in multi-grain bread, baked beans, and diced pineapple
Tues: Mediterranean tuna with pesto and black olives in garlic wrap, cherry tomatoes, banana cake, and pear cubes
Wed: Omelette with mixed vegetables, green beans and mushrooms, baby carrots and snow peas, and Ribena konnyaku jelly
Thurs: Chicken burger with alfalfa sprouts on multi-grain bread, baked potato and pumpkin wedges, cherry tomatoes, and plum wedges
Fri: Tuna pesto macaroni, edamame beans and carrot sticks, cherries and a grape jelly
Most of this week’s lunches were made with leftovers – the omelette used up bits of veggies I had in the fridge, the tuna wrap and pasta was to use up the last can of tuna, the chicken salad was made from an extra chicken piece from the previous night’s dinner, as well as the other vegetable side dishes. I love it when everything gets used up and turned into delicious meals. Will be going grocery shopping this weekend!
