MilkyBar had a short week as its the last week before term break so only had 3 days of school lunches.
Mon: Tuna and corn pasta with cherry tomatoes, kiwi fruit cup and a small caramel pudding
Tues: Leftover Hawaiian pizza with broccoli, and Cara Cara orange segments
Wed: Homemade tomato soup with cheese straws, and green grapes cup
The tomato soup and cheese straw recipes were from a good book “Healthy Lunchboxes for Kids” which I got for really cheap at a booksale. The book provides lovely recipes and lunch ideas and we have tried a number of great recipes from it.
This week we tried Cara Cara oranges that were available at our local supermarket. I really liked them for their lovely colour and they were really juicy without the sharp acidic taste. MilkyBar really liked them too 🙂
Cheese Straws (from Healthy Lunchboxes for Kids)
You can also use other types of cheese like Parmesan.
40 g butter (chilled and cut into small pieces)
40g Cheddar cheese (grated)
1 egg (beaten)
Preheat oven to 180C. Prepare baking tray by lining with parchment paper.
Sift the flour into a large bowl. Rub in the butter using your fingertips til mixture resembles breadcrumbs. Add in the cheese and mix. Add the beaten egg and stir into the flour til mixture starts to come together. Work into a ball. Sprinkle some flour onto a work surface and roll out into a rectangle. Cut widthways into straws (I made them shorter to fit into his lunch box). Carefully lift them onto a baking tray. (I sprinkle some of the straws with poppy seeds.) Bake for 10 min, til golden. Leave to cool before storing in airtight container.
Over the weekend, I managed to get these great bargains. The lunchboxes were $3 each and water bottle was $2. The larger lunchbox even has a compartment to store cutlery and the smaller one has an adjustable divider. Cant wait to use them!
MilkyBar also took part in a colouring competition during a Residents’ Block party over the weekend. He didnt win any prizes but had lots of fun anyway.
