Baking Monday: Breakfast Banana Bars

IMAG2146MilkyBar and myself were both under the weather this wkend. So I needed a quick on-the-run breakfast. These were easy to do and all we need is a glass of milk! They are a little crumbly though so make sure to store in the fridge.

1/2 cup brown sugar
1 (10-oz) jar low-sugar apricot preserves
1/2 cup butter
1 tsp vanilla extract
2 eggs
1 cup flour
3/4 cup whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
2-3 bananas (mashed)

Preheat oven to 170C.  In a medium bowl, combine sugar, preserves, butter, vanilla and eggs. Blend well. Fold in flours, baking powder, baking soda and bananas. Stir til just combined. Pour into a baking pan. Bake for 30-40 min til done.
