Baking Monday – Apple Poptarts

Today we made a very easy Apple Poptarts. I had some slowcooker applesauce that I had made a couple of days ago and decided to make some tarts using bought shortcrust pastry. Easy and yummy!

Slow Cooker Applesauce

5-6 apples (I use a mix of Granny Smiths and Golden Delicious)
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
Pinch of salt
2-3 tbsp sugar (depends on how tart/sweet your apples are)
1/2 cup apple juice or water

Chop up the apples into small dice and place in the slow cooker with the rest of the ingredients. Cook on High for 2 hours. After the 2nd hour, check and adjust sugar accordingly and leave to cook til of the desired consistency. Cool and store in the fridge.

Variations: You can also add in /4 cup golden raisins or some pureed berries. Substitute pears for some of the apples.

I love using this in oat porridge, stirred into yoghurt, serve with pancakes and more. For today, I used some bought shortcrust pastry and made little poptarts that I glazed with pink icing and sprinkles.
