Carrot and Apple Muffins

 Apologies for the delay in posting this. I had actually completed the post but completely forgot to publish it. Sighz.

Anyway, this week, I had an extra bag of carrots that needed using up so we decided to make these carrot muffins. I adapted the recipe from one of my fav muffin books – Muffins A to Z by Marie Simmons. The A to Z cookbook series feature simple, easy and versatile recipes that usually turn out well. So far, I have done several recipes from this book and they have all turned out good including, these carrot muffins. They were dense, moist, lightly spiced and were not overly sweet.

I adapted the Carrot and Apple muffins by including pineapple chunks, leaving out the nuts and reduced the amount of sugar. I also didn’t bother with the topping as I wanted to top the muffins with a chunk of pineapple instead.

Favourite Steiger Haus Carrot and Apple muffins (Adapted from Muffins A to Z)

For the topping (optional, I did not do this)
2 tbsp sugar
2 tsp ground cinnamon

For the batter:
2 cups flour
1 cup sugar
2 tsp baking soda (sieved)
2 tsp ground cinnamon
1/2 tsp salt
2 cups peeled, grated carrot (about 4 medium carrots)
1 cup peeled, cored, grated apple
1/2 cup drained canned pineapple chunks)
1/2 cup finely chopped hazelnuts (optional)
1/2 cup raisins
1/2 cup flaked sweetened coconut
3/4 cup vegetable oil (I used canola oil)
3 eggs
2 tsp vanilla extract

To make the topping (if using): Mix the sugar with the cinnamon. Set aside.

To make the batter:

Preheat the oven to 180C.

Combine flour, sugar, baking soda, cinnamon and salt in a large bowl. Stir in the carrots, apple/pineapple, hazelnuts, raisins and coconut. In a separate bowl (I just use the measuring cup), whisk together the oil, eggs and vanilla. Add to the dry ingredients and fold in gently til just combined. Divide the batter among the muffin cups. Top each muffin with a slice of apple/pineapple. Sprinkle with the topping if using. Bake for 20-25 min, til golden brown. Cool on wire rack.
